Hidden is alive with music! Along with last month’s addition of a new musical mix poolside, a new band has joined the entertainment line up. “Venus” features the vocal stylings of Paulina, who also plays a mean guitar. The boys in the band Sesan and Paco also take turns at the mic. Tono rocks the lead guitar. Luis rocks the drums and provides backup vocals and Paul gets down and funky on the bass and synthesizer.

A Taste of Hidden
Shy Shrimp
This delicious dish came out of its shell and immediately covered itself up again with a sweet coating of cinnamon and coconut.
-
10 shrimp (16/20)
- ½ cup of flour
-
2 eggs
-
1 cup finely shredded coconut
-
2 pinches cinnamon
- ½ cup risotto (Arborio rice)
finely diced onion (to taste)
- ¾ cup white wine
-
2 large spoonfuls of cream
-
1/3 cup parmesan
- ½ cup diced carrot
- ½ cup diced zucchini
- ¼ cup diced red pepper
- ¼ cup diced green pepper

1 ¾ olive oil
1 tsp of salt
- ½ tsp pepper

2 oz. dark chocolate
-
1 ¾ cup fresh orange juice
-
1 ¾ cup demi-glaze sauce
-
1 ½ tbsp honey
-
2 tsp butter
Peel the shrimp. Coat shrimp with flour then with beaten egg. Pat shrimp into the mixture of shredded coconut and cinnamon, then fry. Separately, sate risotto and onion in olive oil. When it becomes transparent, add white wine and reduce. Add half of the chicken stock and cook over low heat. Once most of the liquid evaporates, add the remaining chicken stock. Finally add cream and parmesan. Stir well and place mixture in freezer to chill before shaping into risotto biscuits. Dice the vegetables and sate them in olive oil, lightly season with salt and pepper. Add sugar to orange juice and reduce over medium heat, add the powdered demi-glaze and reduce further. Blend reduction into emulsion with the cold chocolate and butter. Plate as in photo.
